A cake everyone can bake!

“Babovka” means round cake in Slovak, and this type of cake is often baked on Sundays when many people are off work. The recipe is my own. Over the years I’ve gradually perfected it until it has turned out exactly as I like it.

  • 4 eggs
  • 160 g (5½ ozs) butter
  • 200 g (7 ozs) sugar
  • 200 g (7 ozs) semolina
  • 1 teaspoon baking powder
  • 500 g (17 ozs) cottage cheese
  • 1 handful of raisins
  • Zest from 1 lemon

  1. Mix together the eggs, butter and sugar.
  2. Add the semolina and baking powder and gently mix together with the cottage cheese, raisins and lemon zest.
  3. Pour the dough into a greased cake tin.
  4. Bake in the oven at 160°C (320°F) for 55 minutes.
  5. Allow to cool in the tin, then turn upside down on a chopping board and cut into slices.

Very tasty with a cup of tea or coffee…
